I understand some restaurants offer free transport to and from your hotel. But how do we arrange for this? Do we call them or something?

yes, you just call them make a booking and they send a taxi, quite a lot only pay for you to get to the restaurant and not back from it so check when you call

where are you staying? if you are staying in nusa dua (where the restaurant pick up happens a lot) firstly get yourself a taxi to the local village where the restaurants are. walk along and get business cards of the places you would like to try. then you have the phone numbers of the restaurants. the local restaurants are not in walking distance of the main tourist hotels so they offer this service to get business. they pick up and drop off. many restaurants around bali do not offer free pick up but taxis are very cheap.

there will be lots of restaurants in walking distance at legian otherwise a taxi is cheap. sanur is a great place and lots of restaurants. you will need a taxi or driver to get you there. restaurants will not go to legian from sanur to pick you up.
